- 188 g flour
- 3 ripe bananas
- 113 g melted and cooled butter
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1 tsp baking soda
- 150 g brown sugar
- 125 g chopped walnuts
Preheat oven to 350 F (180 C).
In a salad bowl, mash the bananas and add the melted and cooled butter as well as the brown sugar.
Stir with a whisk until the ingredients are incorporated.
Add the eggs as well as the vanilla extract and cinnamon until combined.
In a second bowl, mix the flour, baking powder, baking soda and salt.
Stir the dry ingredient mixture into the previous mixture until incorporated (do not overmix). Then, add the crushed nuts.
Divide the mixture into muffin tins and bake for about 20 minutes or until a toothpick comes out clean.
Place the muffins on a rack and let cool.
